Ingredients

  • 4 chicken thighs (boneless and skinless)
  • 1 cup long-grain rice
  • 2 cups chicken broth

  • 1 bell pepper, chopped

  • 2 tablespoons olive oil

  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, paprika, and thyme.
  2. In a large skillet, heat olive oil over medium-high heat and brown the seasoned chicken on both sides for about 5 minutes each.
