- 4 chicken thighs (boneless and skinless)
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons cornstarch (optional, for thickening)
Instructions
- Season the chicken thighs with salt, pepper, paprika, and thyme.
- In a large skillet, heat olive oil over medium-high heat and brown the seasoned chicken on both sides for about 5 minutes each.
- Remove the chicken and sautรฉ onion, bell pepper, and garlic in the same pan until soft.
- Add the chicken back to the skillet, then mix in rice and chicken broth. Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes until rice is tender.
- If desired, mix cornstarch with water and stir into the dish for a thicker gravy before serving.
