- 1 cup cold unsalted butter, divided
- 1/4 cup sugar
- 1 tablespoon salt
- 1 cup warm milk
- 1/4 cup warm water
- 2 teaspoons active dry yeast
- 1 large egg (for egg wash)
Instructions
- In a mixing bowl, combine warm milk, warm water, and yeast. Let sit for about 5 minutes until frothy.
- In a separate bowl, mix flour, sugar, and salt. Add the yeast mixture and knead for about 10 minutes until smooth. Wrap in plastic and refrigerate for 1 hour.
- Prepare the butter block by placing the remaining butter between parchment paper and rolling it into a rectangle about 1/2 inch thick. Chill for 30 minutes.
- Roll out the chilled dough into a large rectangle. Place the butter block in the center and fold the dough over it. Roll out again and fold into thirds; repeat this process 3 more times, resting for 30 minutes between folds.
- Roll the dough into a large rectangle, cut into triangles, and roll from base to tip to shape the croissants. Place on a baking sheet and let rise for about 1 hour. Preheat the oven to 400°F (200°C), brush with egg wash, and bake for 15-20 minutes until golden brown.

- Store in an airtight container at room temperature for up to 2 days.
