This Family Favorite Spring Pea Salad is a refreshing celebration of springtime flavors! Combining sweet peas, crispy bacon, sharp cheddar cheese, and a creamy dressing, this easy-to-make salad is perfect as a side dish, light lunch, or potluck favorite. Enjoy the taste of spring in every bite!

Ingredients

  • Fresh or Frozen Peas: 2 cups
  • Bacon: 6 slices, cooked and crumbled
  • Cheddar Cheese: 1 cup, diced
  • Red Onion: 1/4 cup, finely diced
  • Mayonnaise: 1/2 cup
  • Sour Cream: 1/4 cup
  • Dijon Mustard: 1 teaspoon
  • Apple Cider Vinegar: 1 teaspoon
  • Salt and Pepper: to taste

Instructions

  1. If using fresh peas, shell them. If using frozen peas, thaw them under cold water and drain well.
  2. Cook the bacon until crispy. Drain on paper towels and crumble.
  3. Dice the cheddar cheese and red onion into small, uniform pieces.
  4. In a large bowl, combine the peas, crumbled bacon, diced cheddar cheese, and red onion.
  5. In a separate small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, and apple cider vinegar.
  6. Pour the dressing over the pea mixture and gently toss to coat.
  7. Season with salt and pepper to taste.
  8. Cover and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a lighter salad, substitute Greek yogurt for some of the mayonnaise.
  • Add other vegetables such as diced celery or carrots for extra crunch.
  • Fresh herbs like dill or mint can brighten the flavor.
  • For added protein, include diced ham or hard-boiled eggs.
  • Make ahead: This salad can be made a day in advance.
