Description

This Easy Pineapple Casserole recipe is a delightful blend of sweet and savory, combining crushed pineapple, cheddar cheese, and a buttery Ritz cracker topping. Perfect for potlucks, holidays, or a simple weeknight side dish, this quick pineapple casserole is guaranteed to be a crowd-pleaser.

Ingredients

Scale
  • 20 oz crushed pineapple, drained
  • 1 cup granulated sugar
  • ½ cup all-purpose flour
  • ½ cup (1 stick) unsalted butter, melted
  • 1 ½ cups shredded cheddar cheese
  • 1 sleeve Ritz crackers, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, ensure your crushed pineapple is well-drained.
  3. Add the granulated sugar, flour, and shredded cheddar cheese to the drained pineapple. Mix well until everything is evenly combined.
  4. Pour the pineapple mixture into a 9×13 inch baking dish. Pour half of the melted butter.
  5. Bake in the preheated oven for 15 minutes.
  6. In a separate bowl, combine the crushed Ritz crackers with the remaining butter.
  7. Sprinkle the cracker mixture evenly over the top of the pineapple mixture.
  8. Drizzle the remaining melted butter over the cracker topping.
  9. Return the dish to the oven and bake for an additional 20 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.
  10. Let cool slightly before serving.

Notes

  • Ensure the pineapple is well-drained to prevent a soggy casserole.
  • For a richer flavor, use salted butter.
  • Add pecans or walnuts to the cracker topping for extra crunch.
  • Serve warm as a side dish or dessert.
