  • 4 tbsp unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1/4 tsp nutmeg
  • 2 cups Gruyère cheese, shredded
  • Fresh thyme sprigs, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish. Toss potato slices with a pinch of salt.
  2. Melt butter in a large saucepan over medium heat. Add onions and cook until softened (5-7 minutes). Add garlic and cook for 1 minute until fragrant. Stir in flour and cook for 1-2 minutes to form a roux.
  3. Gradually whisk in milk and heavy cream until smooth. Bring to a simmer, stirring constantly, until the sauce thickens slightly (3-5 minutes). Remove from heat and stir in salt, pepper, and nutmeg.
  4. Arrange a layer of potato slices in the baking dish, overlapping slightly. Pour one-third of the cream sauce over the potatoes. Sprinkle with one-third of the Gruyère cheese. Repeat layers twice, finishing with cheese on top.
  5. Cover the baking dish with aluminum foil and bake for 45 minutes. Remove foil and bake for another 20-30 minutes, or until potatoes are tender and cheese is melted and golden brown.
  6. Let stand for 10-15 minutes before serving. Garnish with fresh thyme sprigs, if desired.
