- 3 tbsp all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1/4 tsp nutmeg
- 2 cups Gruyère cheese, shredded
- Fresh thyme sprigs, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish. Toss potato slices with a pinch of salt.
- Melt butter in a large saucepan over medium heat. Add onions and cook until softened (5-7 minutes). Add garlic and cook for 1 minute until fragrant. Stir in flour and cook for 1-2 minutes to form a roux.
- Gradually whisk in milk and heavy cream until smooth. Bring to a simmer, stirring constantly, until the sauce thickens slightly (3-5 minutes). Remove from heat and stir in salt, pepper, and nutmeg.
- Arrange a layer of potato slices in the baking dish, overlapping slightly. Pour one-third of the cream sauce over the potatoes. Sprinkle with one-third of the Gruyère cheese. Repeat layers twice, finishing with cheese on top.
- Cover the baking dish with aluminum foil and bake for 45 minutes. Remove foil and bake for another 20-30 minutes, or until potatoes are tender and cheese is melted and golden brown.
- Let stand for 10-15 minutes before serving. Garnish with fresh thyme sprigs, if desired.
