- 2 cups shredded Gruyere cheese
- 1/2 cup breadcrumbs (optional)

- Preheat your oven to 350Β°F (175Β°C). Cook the elbow macaroni according to package directions until al dente. Drain well and set aside.
- In a large saucepan, melt the butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the milk until the mixture is smooth and creamy. Continue to cook, stirring constantly, until the sauce thickens slightly, about 5-7 minutes.
- Remove the saucepan from the heat. Stir in the salt, pepper, and nutmeg. Gradually add the cheddar and Gruyere cheese, stirring until the cheese is melted and the sauce is smooth.
- Add the cooked macaroni to the cheese sauce and stir until well combined. Pour the cheesy mac and cheese mixture into the prepared baking dish. If desired, combine breadcrumbs with melted butter and sprinkle over the top. Bake for 20-25 minutes, or until golden brown and bubbly.
