- 4 thick-cut lamb chops
- 1/4 cup fresh mint, chopped
- 2 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
- 1 tablespoon garlic powder
- 2 tablespoons olive oil
- 1/2 cup shallots, minced
- 1/2 cup white wine
- 1 cup heavy cream
- 2 tablespoons butter
Instructions
- Mix chopped mint, minced garlic, salt, and pepper in a bowl. Rub this mixture onto both sides of the lamb chops and marinate for at least 15 minutes.
- Heat olive oil in a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side until golden brown.
- In the same skillet, add shallots and cook until softened. Deglaze with white wine and allow to reduce.
- Stir in heavy cream and remaining chopped mint, then let it simmer to thicken.
- Return lamb chops to the skillet, spoon sauce over them, and simmer for additional 5-7 minutes until done. Add butter before serving.
