Instructions
- Preheat oven to 350Β°F (175Β°C). Grease and flour a 9×13 inch baking pan or two 9-inch round cake pans.
- In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, combine the sugar, oil, eggs, and vanilla extract. Beat well until smooth and creamy.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently fold in the grated carrots and nuts (if using).
- Pour the batter into the prepared pan(s) and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
