Description

This Simple Cabbage Bread Recipe is a delightful and easy option for busy weeknights, perfect for incorporating more vegetables into your meals. It’s moist, slightly sweet, and savory – an ideal complement to soups, stews, and more.

Ingredients

Scale
  • 4 cups shredded cabbage
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons melted butter

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  2. Add the shredded cabbage and cook until it wilts and becomes tender, approximately 10-12 minutes.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
  4. In a separate bowl, whisk together the milk and eggs. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the sautéed cabbage and onion mixture until evenly distributed.
  6. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  7. Pour the cabbage bread batter into the prepared pan and spread evenly.
  8. Drizzle the melted butter over the top.
  9. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Don’t Overmix: Overmixing can result in a tough bread.
  • Cabbage Prep: Ensure the cabbage is cooked until tender but not mushy to prevent a soggy bread.
  • Variations: Add other vegetables like carrots or herbs like dill for extra flavor.
  • Serving Suggestions: Serve warm with butter or as a side dish.
